Appetizer Recipe: Easy Feta Guacamole!

I am a self-appointed guacamole connoisseur.  Bring me some guac and you have a friend for life.  I prefer mine chunky with lots of yummy things added, and my all-time favorite is this easy recipe (which I made for my summer kick-off BBQ) that I am about to share.  If you love guacamole and you love feta, then you will die over the two mixed together, trust.



Easy Feta Guacamole
Serves 4

Ingredients:
2 ripe avocados
2-4 green onions
juice of 1 lime
1/2 cup cilantro
3 oz. crumbled feta
salt and pepper to taste

Directions:
Halve and pit avocados. Scoop out flesh into bowl and mash to desired thickness. Chop up green onions and add to bowl. Chop up cilantro to desired size (I like big pieces, some prefer them diced up tiny), add to bowl. Squeeze juice of one lime into bowl. Mix all ingredients. Add 3 oz. of crumbled feta to bowl and carefully mix until the feta has mixed well with the avocados. The more you mix, the more blended it will become. Stop at your desired level of chunkiness/creaminess.  Season to taste. Serve with tortilla chips or pita chips.



That's it!  Super simple and so delicious.  I like this recipe because it creates a nice batch for up to four people without having to use too many avocados-they can get expensive! Also note that you can add more or less of the onions/cilantro/feta to your desire. In the past, I've also added chopped tomatoest, which can bulk it up even more. You can also try blue cheese instead of feta, plus add crumbled bacon-that is a doozy too! There are so many fun variations to try!
