Pistachio Sun Dried Tomato Holiday Spread

I wanted to share with you a super easy appetizer recipe that has gotten rave reviews every single time I have made it.

I've never posted a recipe because 1. I hate to cook and 2. I suck at cooking (I'm not sure which came first...do I hate to cook because I suck at it, or do I suck at cooking because I hate it?). Needless to say, there is no cooking involved in this recipe. Woo Hoo! So whip it up for your next shindig, sit back and wait for the compliments to roll in!


16 oz. of cream cheese (I find it easiest to buy the two 8 oz. boxes)
1 (8.5 oz) jar of pesto
1 (8.5 oz) jar sun dried tomatoes, Julienne cut, well drained
1/2 (9 oz) jar sun dried tomato spread
1 cup pistachio kernels, chopped

On plastic wrap, spread half of the cream cheese into a rectangle (this is where I use one whole 8 oz. box), no more than ¼" thick. Cover with plastic and repeat with remaining half of cream cheese. Refrigerate until chilled, at least 2 hours.

Place 1 layer of cream cheese on a serving plate. Distribute tomato spread evenly on top to the edges. Spoon half of pesto over the tomato spread. Place second layer of cream cheese on top. Spoon remaining pesto evenly over the cheese. Top with julienne cut sun dried tomatoes and half of pistachios. Loosely press remaining pistachio kernels around the sides. Serve with crackers.

A few notes:

I've made it without the pistachios and it is still turns out great.

I've also made it a few times with a sun dried tomato/pesto combined spread, instead of buying them separate and that works just as well too.

I have found that I like it the best served with good ol' fashioned Ritz crackers.

Lastly, I use the whole jar of tomato spread instead of just half. I put half on the bottom layer and half on top. I figure the more the merrier!
